Chili con carne

A healthy beef and veggie dish

Ingredients

  • 500 g organic beef minced
  • 1 large onion chopped
  • 3 cloves garlic chopped
  • 2 tbsp olive oil
  • 2 sticks celery chopped
  • 2 carrots chopped
  • 1 zucchini chopped
  • 1/2 red capsicum
  • 4 large red tomatos or 1 can tomatoes
  • 1 can kidney beans
  • 2 tbsp tomato paste organic
  • 1 tsp cumin heaped
  • 1 tsp paprika heaped
  • fresh chilli to taste
  • 1/2 cup stock I use bone broth
  • 6 chunks dark chocolate organic
  • 1 tsp salt
  • pepper to taste
  • coriander to garnish
  • 6 sprigs oregano, chilli

Instructions

  1. Stir fry the beef and onion in olive oil until meat starts to brown.

  2. Add garlic, celery and carrots, cook for a couple of minutes stirring well.

  3. Next add the tomatoes and zucchini.

  4. Cook the veggies and meat for a few more minutes.

  5. Now add tomato paste, spices, chilli, salt and pepper.

    Stir in stock.

  6. Simmer for 15 mins on a low heat. Add the oregano and chocolate.

  7. Allow to simmer for another 5 mins on low heat until all veggies are cooked.

    Serve with fresh coriander.
