Lemon Myrtle fish

Ingredients

  • 4-6 pieces mullet or preferred white fish
  • 1 brown onion
  • 3-5 leaves lemon myrtle
  • 4 cloves garlic chopped
  • 2 tsp ginger grated
  • 2 tbsp olive oil
  • 1 lemon juice of
  • 1 tsp salt
  • 1 tsp pepper
  • 2 sweet potato
  • 1 cob corn chopped
  • 2 sticks celery chopped
  • 1 red onion chopped
  • 1 bunch brocolini chopped
  • 4 small beetroot cooked

Instructions

  1. Stir-fry onion, garlic, ginger and olive oil in a pan


  2. Once onion has become transparent, add shallots and 3-5 leaves of lemon myrtle.  Stir for a minute or so. Add these contents to a baking dish.

  3. Lay fillets of fish over cooked ingredients. 

    Squeeze juice of one lemon over the fish. Add salt and pepper.

    Can add butter or olive oil over the fish.

    Cover with a lid and bake for 15-20 minutes until fish is tender and cooked.

  4. Steam chopped sweet potato and mash.


  5. Stir-fry sweetcorn, broccolini, garlic, red onion and celery and a tbsp of vegetable stock.
