500gfresh organic spinachchopped into small strips
1large onionfinely chopped
3tbspsesame or olive oil
1tspgingerfinely chopped or 1 tsp ginger powder
1tspground cumin
1/2tspsweet paprika
2tspcoriander powder
1/2tspturmeric
1tspgaram masala
3tbspnatural plain yogurt
1large fresh tomatofinely chopped
220gpanir cheese (See next recipe) or goats cheesecut into cubes
pinchof salt
pepper to taste
Instructions
Slightly steam the spinach and leave to the side.
In a pan stir fry the onion with the oil. After a couple of minutes add the fresh ginger and cumin until the onions just start to turn brown. Next add the tomato and the other spices.
Take off the heat and stir in the yogurt, spinach and then the panir cheese. You may need to add 1/4 cup of water (use the water from steaming the spinach).
Simmer on a low heat for 10 minutes.
