
A healthy paleo version cottage pie with organic minced beef and lots of veggies.
Saute beef, onion and garlic in a large sauce pan until beef slightly browning

Then add the tomato, zucchini and mushrooms for another couple of minutes

Next pour in the stock and reduce heat to simmer for 10 minutes until all the veggies are cooked. In the meantime put the sweet potato and cauliflower on to steam.

Add the rice flour to the meat mix and stir in well.

In a baking dish, spread the minced meat and veg to cover the base of the dish.

Strain and mash the sweet potato and cauliflower with a tablespoon of olive oil

Add salt and pepper to taste

Spoon the mash over the meat and spread evenly

Garnish with sliced tomato and fresh herbs
Cook in a preheated oven for 15-20 mins at 180 degrees, until slightly brown on top
Serve with fresh steamed green veg, e.g brocoli.
