Amina's Spice Mix
A warming homemade spice blend for curries and Mexican dishes, made with turmeric, cumin, paprika and cinnamon, ready in minutes and easy to adjust to taste.
This is a handy all-purpose spice mix to keep in the cupboard, ideal for curries and Mexican dishes alike. It comes together in 5 minutes from pantry staples, so you can skip the shop-bought blends and know exactly what is going into your food. For Indian dishes you can simply add a little more turmeric and cumin to deepen the flavour. It pairs beautifully with a gentle chicken korma or a pot of spicy chickpea curry.
Ingredients
- 1 tsp ground cumin
- 1 tsp ground ginger
- 2 tsp turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp ground coriander
- 2 tsp paprika
- 1 tsp chilli powder (if you like a spicier mix)
- 1 tsp salt
- 1 tsp cracked pepper
Method
- Measure all the ground spices into a small bowl.
- Stir well so the colours are evenly blended through.
- Spoon the mix into a clean, dry jar with a tight-fitting lid.
- Store in a cool, dark cupboard and use within a few months for the freshest flavour.
Add a tablespoon or two to curries, stir through roasted vegetables, or rub over meat before cooking for an easy hit of warming spice.
