Protein cookies

Love this recipe from my friend Barbara. A great healthy snack for a quick pick me up of energy.

Ingredients:

• 3/12 cups almond meal

• ½ tsp baking powder

• ½ tsp salt

• 1 ½ cups walnuts, slightly chopped

• 1 tbsp chia seeds (optional)

• 2 eggs

• ½ cup coconut oil, melted

• ½ cup maple syrup

• 1 tsp vanilla essence

Method:

Pre heat oven to 180 °

1. Mix all the dry ingredients in one mixing bowl.

2. In another bowl whisk the eggs, maple syrup and vanilla essence

3. Pour in and mix the coconut oil to the egg mix

4. Now add the wet egg mix into the dry bowl and mix well

5. Place tbsp sixed blobs of cookie dough onto greased baking trays.

(Makes 24 cookies)

6. Bake for 20 mins or until they turn slightly golden. Allow to cool.

Tip: ½ Chocolate chips can be added as a last ingredient for extra sweetness.
