Millet Porridge

A warming, gluten-free and dairy-free millet porridge with apple, sultanas, cinnamon and nutmeg, an easy plant-based breakfast to start the day.

This is a gentle, naturally sweet breakfast porridge built on millet, a soft, fluffy gluten-free grain. Soaking the millet overnight helps with digestion and shortens the cooking time, while apple, sultanas, cinnamon and nutmeg bring warmth and natural sweetness without any added sugar. It is a lovely plant-based way to start the day, and pairs well with the same wholefood approach in Amina's consultations.

Ingredients

  • 2 cups millet, organic, washed and soaked overnight
  • 1 tsp nutmeg, or freshly grated nutmeg pods
  • 1 stick cinnamon
  • 1 apple, organic, peeled and chopped
  • 1/2 cup sultanas or dried fruit, organic
  • 3 cups water

Method

  1. Add the millet, nutmeg, cinnamon stick, apple and sultanas to a pan with 3 cups of water.
  2. Heat until boiling, then reduce the heat and simmer slowly for around 20 minutes, stirring occasionally, using the absorption method.
  3. Turn the heat off and leave the lid on for another 5 minutes, until ready to serve.
  4. Remove the cinnamon stick and serve warm.

Serve with rice milk or almond milk, and a little extra dried fruit on top if you like.
