Natural Onion, Garlic and Honey Syrup
A simple traditional onion, garlic and honey syrup, a soothing folk remedy gently infused over 24 hours and kept on hand through the cooler months.
This is a simple, old-fashioned kitchen remedy that has been passed down for generations. Onion, garlic and honey are left to infuse together for a day or so, drawing out a golden syrup that has long been a traditional companion through the cold and cough season. It takes only a few minutes to put together, then time does the rest. Keep a small jar on hand in the cooler months, and pair it with a nourishing bowl of something warm like a Sri Lankan dhal. Ingredients
- 1 onion, peeled and sliced
- 1 jar of natural honey
- 1 clove garlic, cut in half
Method
- Place the sliced onion and halved garlic clove into a clean jar of honey, leaving roughly an inch gap at the top.
- Screw the lid on tightly and shake so the onion and garlic are completely coated in honey.
- Leave to infuse for at least 24 hours, shaking a few times to mix everything well.
- As it sits, the honey draws moisture and the natural goodness from the onion and garlic, loosening into a slightly runnier syrup.
- Strain the honey into a clean jar to separate out the onion and garlic. It is now ready to use.
Traditionally taken as 1 heaped teaspoon up to 3 times a day. It keeps for around a month in a cool cupboard, as the honey naturally preserves the onion and garlic.
